You just have to keep trying. That's an easy part compared to a lot of parts.
The hardest star in Super Mario Galaxy 1 for me is the purple coin comet in Dreadnought galaxy. The camera view makes it so you can't see if you are too forewards or backwards (from your camera view), and that makes you miss purple coins, and if you miss one purple coin, you lose.
I just reached World 4 in Super Mario Galaxy 2.

The hardest star I think is the hardest is the daredevil run in Deep Dark Galaxy (SMG1, or sub machine gun 1? *shot*) where you have to fight Kamella with one bit of health.
I have the Super Mario Galaxy Prima Official Game Guide in my room that explains an entire walkthrough (except the ending after getting 100% with both characters) but there are some mistakes like...
- different names for galaxies. Like Bowser's Dark Matter Plant is instead, in the guide, called Bowser's Dark Matter Reactor.
- There are parts of the guide with the word "tuck". But at a small distance where you're still able to read it, it looks like swearing.
- Since the planetoid that the hungry luma turns into in the star "hurry, he's hungry" in Sea Slide is exactly like the one in Hurry Scurry Galaxy, the guide's mistake was putting the map of the first planetoid in Hurry Scurry (the path) as the planetoid map for the one in "hurry, he's hungry"
Prima also made their Official Game Guide to Mario Kart Wii with fully detailed bird-eyed views of tracks. I'm gonna get one when I see it and if I have the money

Really? That took me only about twenty tries. Red star is easy to get. After you defeated final Bowser Junior boss, you'll unlock a new planet near the comet observatory. Go there using warp pads and you'll be in the gateway galaxy (the galaxy you had to chase the star bunnies). Then, a new star will show up.
Click on it and go upstairs to Rosalina.
Then talk to the red luma and
he will give you the power to FLY! then, try to collect all the floating purple coins and the ones that are on the planet.
That star is very relaxing.
