Let me ask it another way...
How do I quickly and easily find out what I have missed along the way. I had 95 stars before I finished and I assume I needed 100 to access those gates just near the end.
I am also missing 3 pieces of map.

You can't get back once you've done the final level. If you have a save from just before you did it then you'll have to use that to get to the other levels. Then you can please yourself whether you do the final level again afterwards.
In my opinion, not being able to get back into the game after the last level, or not warning you at least is a major fault of the game.

Fortunately I had saved a number of times on the last level - I have gone back and found 4 more stars and the rest of the map. It appears I have missed a level or two along the way (plus the star key levels). Now I just have to find them - more easliy said than done.

Have you used all the glyphs?

I am replying to my own post as above.
I needed to go back and revisit certain areas (I went all over the island), talking to other characters, checking hidey holes and buying anything I didnt previously have, Doing that I located stars and levels I had missed. From there, the answers to all the major questions started to answer themselves.
I finished with 112 stars before 'The end of it all'.

Popo, since this game had a specific "ending" (with a clear indication of where the story would go next), it didn't make the same sense as in WA1 to have the player run around Wonderland collecting missed stars first.
You don't, however, need a savegame from before the level. Once in "At the end of it all" you can also simply abort and then go for the missing stars. I guess the only thing that might happen is that someone plays through multiple adventures before the final one without ever saving once, and then has to replay those. But given the difficulty at the end, how likely is that to happen.

I know where you're coming from, but given that so many people have wondered how they can carry on and get those other stars it makes me think that there should be some sort of warning that this is the end of the game.
I don't think I would have wanted to struggle through that last level only to find that the only way to go back and do what I missed was to abort it or go back to a previous save game, meaning that in order to finish it completely I would have to struggle through it again.
I have no idea how this would work, maybe a sign at the entrance to that level, before the trolls start chasing you. Although you would think that 'At the End of it All' might be a clue that it's the 'final' level.

And I'm on Limited Access, with that annoying scritter room. It's the only level stopping me from getting to The End of it All.

I finished only 24 hours or so ago, yet here I am looking at posts etc, pining for a new level or two to feed the monster:
