This is a question for the people who run the forum:
If you send a PM to someone, then delete the post out of "Sent mail," does the mail (PM) not reach the person you're sending it to
This is just a little worry I have, so I just wanted to be at peace of mind

Once the PM has gone from your outbox to your sent box it means they have already picked it up and read it. Even if you delete it from your sent box it will still be in their inbox, so you can happily delete the messages in your sent box without any worries.

Just noticed you were asking the people who run the forum, not me. I think the answer will be the same though.
